Veggie Pastry Slices

25 Minute Veggie Pastry Slices. Cheesy, veggies, pastry and proper home comfort food. Great for lunch or dinner.

Serves: 4 Time: 25 minutes


 

Fresh Ingredients

  • 375g Pack Puff Pastry, quartered (cut to the length of the asparagus)

  • 350g Asparagus Spears

  • 6 Tablespoons Cream Cheese

  • 40g Parmesan, shaved

  • 3 Tablespoons Basil, chopped

Cupboard Ingredients

  • 1 Tablespoon Olive Oil

Optional Ingredients

  • 1/2 Lemon, zested

  • Bag of Salad or extra steamed greens

Method

  1. Heat the oven to 200°C. Then in a bowl, mix the cream cheese, parmesan, lemon zest and basil.

  2. Put the pastry onto 2 greased trays, then score around the edges of each piece to make a thin border. Spread the cheese mixture over the pastry, keeping within the borders.

  3. In a bowl, drizzle oil over the asparagus, mix well, and then place the spears on top of the pastry.

  4. Bake for 20-25 mins until golden, and serve with salad or extra steamed veggies. Easy!
