Veggie Sliders

10 Minute Veggie Sliders. These burgers are super quick to make, give them a go and thank me later.

Serves: 4 Time: 10 minutes


 

Ingredients

Fresh Ingredients

  • 1 Lemon, zested and juiced

  • Small Bunch Coriander, chopped

  • 1 Egg, beaten

  • 1 Large Tomato, sliced

  • 1/2 Cucumber, sliced

Other Ingredients

  • 4 Burger Buns

  • 400g Canned Chickpeas, drained

  • 1 Teaspoon Ground Cumin

  • 100g Breadcrumbs

  • 1 Red Onion, ½ diced, ½ sliced

  • 1 Tablespoon Olive Oil

  • Optional chilli sauce or jalapenos

Method

  1. In a food processor, whizz the chickpeas, lemon zest, lemon juice, cumin half the coriander, the egg and some seasoning.

  2. Scrape into a bowl and mix with 80g of the breadcrumbs and the diced onions. Form 4 burgers or 8 thinner patties (totally up to you), then press remaining breadcrumbs onto both sides and chill for at least 10 mins.

  3. Heat the oil in a frying pan until hot. Fry the burgers in batches for 4 mins each side, keeping the heat on medium so they don’t burn.

  4. To serve, slice each bun and fill with a slice of tomato, a burger, a few red onion slices, some cucumber slices, a dollop of chilli sauce/jalapenos and the remaining coriander.

  5. Enjoy with an extra green salad and a nice treat dessert from the snack menu.
