Veggie Sub Sandwich

20 Minute Veggie Sub Sandwich. Ooooff what a treat - perfect for lunch.

Serves: 4 Time: 20 minutes



  • 4 x 135g Ciabatta Rolls

  • 1 Aubergine, sliced into discs

  • 2 Red Peppers, sliced thickly

  • 120g Mozzarella, torn

  • 4 Tablespoons Basil, torn

  • 8 Sundried Tomatoes or Beef Tomato, sliced

  • 1 Tablespoon Balsamic Glaze


  1. Heat the oven to 220°C.

  2. Toss the peppers and aubergine in the oil, season and roast for 20 mins.

  3. Halve the ciabatta rolls and pop them in the oven for 5 mins just before the veg is ready.

  4. Build your subs with the roasted veg, mozzarella, basil, sun dried tomatoes and balsamic glaze on top!

  5. Wrap tightly in cling film or tin foil ready to take to work with you. or enjoy it warm straight away if working from home!
