Vietnamese Beef Pho

15 Minute Vietnamese Beef Pho. Ideal for a quick weeknight meal, on the table in 15 minutes. My daughter loved trying this for the first time in Vietnam. Yum!

Serves: 2 Time: 15 minutes


 

Ingredients

  • 1 Shallot, diced

  • 1 Tablespoon of Olive Oil

  • 100g Rice Noodles

  • 80g Mange Tout, more if you like

  • 1 Teaspoon Of Chilli Flakes

  • 1 Thumb Sized Piece of Fresh Ginger, cut into matchsticks

  • 1 Beef Stock Cube

  • 2 Tablespoons Hoisin Sauce

  • 2 Flank Steaks


Method

  1. Boil a kettle of water and set aside. Bring a pan of water to boil then pop the noodles in for 5 mins. Once soft remove and run them under cold water. Drain and set aside.

  2. Next, drizzle the oil over the steaks and season well. Heat a non-stick pan over high heat, once hot add the steaks and fry for around 1 min per side.

  3. Once ready, remove, cover and set aside. Using the same pan, sauté the garlic, chilli flakes, shallot and ginger. Then add 750ml of boiling water and add the stock cube. Mix well then add the hoisin and mix well.

  4. Next add any juice from the steak to the same pan, bring everything to a boil then simmer for 5 minutes. Then add the mange tout for a further 3 mins.

  5. Season the broth well then divide between bowls, top with the sliced steak and enjoy!
