20 Minute BBQ Kebabs + Mango Salsa. Perfect for summer, enjoy!
Serves: 4 Time: 20 minutes
Fresh Ingredients
Big Bag of Salad of choice
640g Chicken Thighs, cut into chunks
If using Lamb, use 500g for 4 people
Cupboard Ingredients
50g Chipotle or Harissa Paste (optional)
8 Skewers, soaked in water
1 Tablespoon Olive Oil
Mango Salsa Ingredients
1 Mango, diced
1 Red Pepper, diced
1 Red Onion, diced
1 Lime, juiced
1/2 Teaspoon Salt
Handful Coriander, chopped
Method
Combine 1 tablespoon of olive oil, chipotle and salt and pepper in a large bowl. Toss the chicken in the mixture allowing it to marinate for 5 mins, before threading the chicken onto the soaked skewers.
Next, either use your BBQ or grill. Cook the chicken under the grill for 20 mins, turning so they charr nicely on all sides.
While everything is cooking, make the mango salsa. Just mix all ingredients together and set aside.
Serve the skewers with a big salad and the mango salsa on the side.
