Breakfast Pizza

Serves 2. Great for any day of the week, packed with protein!

Serves: 2 Time: 5 minutes



  • 4 eggs

  • salt & pepper

  • ½ red onion, chopped

  • 1 tbsp. olive oil

  • 1 large tomato, sliced

  • 1 tbsp. dried oregano

  • 40g ham, chopped

  • 30g shredded cheddar cheese


  1. Whisk the eggs in a bowl, season with salt and pepper, and stir through the red onion.

  2. Heat the olive oil in a non-stick pan over a medium heat. Place a layer of tomatoes in the bottom of the pan and cook for 2-3 minutes.

  3. Pour the eggs over the tomatoes, sprinkle with half the oregano and cook for 2-3 minutes.

  4. Now scatter over the ham and cheese and add the remaining oregano.

  5. Cook for a further 2-3 minutes until the eggs are set. Slice and serve immediately.
