5 Minute Cartel Quesadilla Wrap. I do love a Mexican wrap - perfect for lunch at home.
Serves: 2 Time: 5 minutes
Ingredients
2 Large Flour Tortillas
125g Cheddar Cheese, grated
200g Black Beans, rinsed and drained
10 Cherry Tomatoes, sliced
1⁄4 Red Onion, sliced thinly
10 Pickled Jalapeños
2 Teaspoon Olive Oil, for brushing
1⁄2 Avocado, sliced
Green Salad of Your Choice
Method
Heat a large non-stick pan over high heat. Pop your tortilla wrap in for a few seconds, then flip to toast the other side.
Start to build your quesadillas by layering the filling onto one half of the tortilla while it's still in the pan.
Once all the filling is in, fold the other half over. Then flip once more to continue toasting on the opposite side.
When the cheese has fully melted, remove from the pan and set aside.
Toss your salad together, cut the quesadilla into triangles, serve together and enjoy!
