Chicken Zoodle Soup

High protein lunch or dinner ready in 20 minutes. One of my faves!


Serves: 4 Time: 20 minutes


 

Ingredients

  • 2 tbsp coconut oil or olive oil is fine

  • 450g chicken breast, chopped

  • 1 onion, diced

  • 2 stalks celery, diced

  • 2 carrots, chopped

  • 3 garlic cloves, chopped

  • 1 tsp dried thyme

  • 950ml chicken stock

  • 2 medium courgettes, spiralised or you can get pre-made into spirals


Method

  1. Heat a large pot with 1 tbsp oil over medium-high heat, whack in the chicken and season well. Cook for 4-5 mins until nicely browned, then set aside

  2. In the same pot heat another 1 tbsp oil and whack in the carrots, onion, celery, garlic, thyme and rosemary, mix well.

  3. Next throw in the chicken stock, and 470mls water. Bring to a boil, then reduce to a simmer for 10 mins.

  4. Throw in the chicken and cook for a further 5 mins.

  5. Finally, throw in the zoodles and cook for a final 2-3 mins until everything is ready. Season well and serve!
