Creamy Prawn Carbonara

20 Minute Creamy Prawn Carbonara. Try to use nice big juicy king prawns, added with the creamy carbonara sauce and this will be a taste sensation!


Serves: 4 Time: 20 minutes

 

Ingredients

  • 220g Pasta of Your Choice (I chose Ziti)

  • 2 Tablespoons Olive Oil

  • 2 Tablespoons Butter

  • 450g Prawns, raw, peeled and deveined (if you don't feel comfortable with raw prawns you can buy cooked)

  • 9 Cherry Tomatoes

  • 2 Garlic Cloves, minced

  • 1 Teaspoon Plain Flour

  • 230mls Double Cream

  • 20g Parmesan Cheese, grated

  • 100g Baby Spinach

  • 2 Tablespoons Basil, chopped fine


Method

  1. Heat your grill to high. Then boil a large pot of water over medium-high heat, once boiling throw in your pasta and cook until al dente (fully cooked but still a little firm), about 8-10 minutes depending on the pasta you chose (check the pack instructions). Drain the pasta (reserving a little of the pasta water for later), drizzle over a little olive oil to keep it from sticking and set aside.

  2. Meanwhile, add your cherry tomatoes to a baking tray, drizzle with a tiny bit of olive oil and salt and pepper and throw under the grill for 8 minutes until nicely cooked. Once done, cover and keep warm.

  3. Next, heat the 1 tablespoon of olive oil in a large pan over medium-high heat for 2 minutes until the oil is sizzling. Throw in your prawns, half the garlic and season with salt and pepper. Sauté for 2.5 minutes on each side until the prawns become nicely browned. They should not be grey/translucent anymore and they should have turned pink. Set aside on a plate once done.

  4. In the same pan, whack in the butter and garlic. Sauté until fragrant, about 1 minute. Stir in the flour and mix until well combined.

  5. Next, throw in the cream and parmesan (save a little for topping later). Stir well and let the sauce come to a simmer. Once simmering reduce the heat to medium and stir until the sauce thickens and there's no lumpy bits.

  6. Once you've done that, throw in the spinach and cook until wilted, about 1 minute. Then throw back in your prawns and stir to coat well.

  7. Next we are adding back in the cooked pasta and stirring until fully combined. If you think it needs it, you can add in a little of the reserved pasta water here.

  8. Once done, and the pasta is warmed through, sprinkle over the fresh basil, cooked cherry tomatoes and remaining parmesan. OMG! Yummy!
