Mexican Halloumi

20 Minute Mexican Halloumi. Transport yourself to Mexico with this cheesy delicious veggie dish. You will love it. fact!

Serves: 4 Time: 20 minutes



  • 1 Bunch Coriander, chopped

  • 2 Red Peppers, sliced

  • 2 Spring Onions, sliced

  • 400g Halloumi, sliced into strips

  • 2 Garlic Cloves, minced

  • 800g Black Beans, drained

  • 40g Chipotle or Harissa Paste

  • 2 Tablespoons Mayonnaise

  • 2 Tablespoons Red Wine Vinegar

  • 1 Pack Microwaveable Brown Rice

  • 3 Tablespoons Olive Oil


  1. Heat a large non-stick pan with 1 tablespoon of olive oil over high heat. When hot add the peppers and cook for 4 minutes. Then reduce the heat and add the garlic, continue to cook for 10 mins more.

  2. Meanwhile, combine the mayo, chipotle, 1 tablespoon of olive oil, vinegar, and a splash of water. Mix well and set aside. Once the peppers are done, add the black beans and cook until warmed through.

  3. Meanwhile heat the rice according to the package instructions, when done transfer to a large bowl and add the peppers to the same bowl reserving the pan for the next step.

  4. Return the pan to high heat with 1 tablespoon olive oil, when hot add the halloumi and cook until golden on both sides.

  5. To serve, add the coriander and spring onions to the rice, mix well and divide between plates. Pop the halloumi on top and finish with a drizzle of dressing!
