15 Minute Mushroom Carbonara. Super quick to make, so filling and perfect for mushrooms lovers!
Serves: 2 Time: 15 minutes
Ingredients
1 Teaspoon Olive Oil
400g Mushrooms, sliced
125g Asparagus, chopped
2 Courgettes, grated
1 Garlic Clove, crushed
1 Small Handful Parmesan, grated
100g Crème Fraîche
150g Tagliatelle
60g Rocket
Method
Heat the oil in a large non-stick pan then add mushrooms, asparagus and courgette, saute until soft. Around 5 mins, then add garlic, cooking for a further minute.
Cook the pasta according to the package instructions. Saving one ladle of the pasta water.
Once ready, add the pasta to the pan with the mushrooms and courgette. Toss everything together, add the crème fraîche, the reserved pasta water and half the parmesan. Mix well and cook for a further 1 minute.
Season to taste and serve with rocket and the remaining parmesan on top!
