Penang Curry

15 Minute Penang Curry. So filling and bloody beaut flavours in this asian curry dish. Enjoy!

Serves: 4 Time: 15 minutes



  • 350g Bag Of Mixed Fresh Veg

  • 1 Onion, sliced

  • 1 Tablespoon Olive Oil

  • 4 Tablespoons Penang Curry Paste

  • 6 Cloves of Garlic

  • 1 Can Coconut Milk

  • 3 Tablespoons Peanut Butter

  • 1 Bunch Coriander, chopped

  • 400g GF or Rice Noodles


  1. Heat 1 tablespoon olive oil, and add your vegetables to the pan.

  2. Fry for around 5 mins. Then add the coconut milk, peanut butter, and curry paste. Season well and cook for 10 minutes.

  3. Next, add the noodles to the same pan, toss to coat well and heat through!

  4. Sprinkle the coriander on top to serve.
