Pork Tenderloin

30 Minute Pork Tenderloin. Perfect for date night!

Serves: 2 Time: 30 minutes


 

Ingredients

  • 120g Asparagus

  • 120g Cherry Tomatoes, chopped finely

  • 1/2 Lemon, juiced

  • 1 Red Onion, cut in to wedges

  • 1 1/2 Tablespoon Of Olive Oil

  • 2 x 180g Pork Tenderloin

  • 300g Sweet Potato, sliced thinly

  • 1 Handful Of Fresh Basil, chopped finely

Method

  1. Heat the oven to 200°C.

  2. Heat a large non-stick frying pan with 1 tablespoon of oil, season and brown the pork on all sides for around 3 mins. Once done, place them on a tray and into the oven for around 25 mins until fully cooked.

  3. Meanwhile, toss the potatoes and onion in the remaining oil, season then bake in the oven for around 20 mins.

  4. Combine the tomatoes and basil in a bowl, add the lemon juice, seasoning and the remaining oil. mix and set aside.

  5. Next add the asparagus to a saucepan, cover with boiling water and simmer for around 2 mins, until the asparagus is tender, once done, drain and set aside.

  6. When the pork is fully cooked, slice it up evenly and serve along side the asparagus, roasted veg and the tomato mixture on top!
