15 Minute Simple Chow Mein. Super quick on the table and so many flavours!
Serves: 4 Time: 15 minutes
Fresh Ingredients
4 Nests Medium Egg Noodles
4 Spring Onions
300g Beansprouts
Tenderstem Broccoli, unlimited
100g Frozen Peas
Throw in any other veggies that need using up
Cupboard Ingredients
1 Tablespoon Olive Oil
Soy Sauce to serve
Method
Put the egg noodles in a large bowl, cover with boiling water and leave to soak for 8 mins, or until the noodles are tender.
Do the same with the broccoli and peas and steam for 8 minutes.
Meanwhile, heat the oil in a large, non-stick frying pan and fry the spring onions for 1 min.
Add the bean sprouts and continue to fry, stirring, for 2 mins. Add in the steamed veg and stir for another 1 minute.
Drain the noodles and add to the pan with a good splash of soy sauce.
Stir-fry for 1 min more, then season and serve.
