Simple Chow Mein

15 Minute Simple Chow Mein. Super quick on the table and so many flavours!

Serves: 4 Time: 15 minutes


 

Fresh Ingredients

  • 4 Nests Medium Egg Noodles

  • 4 Spring Onions

  • 300g Beansprouts

  • Tenderstem Broccoli, unlimited

  • 100g Frozen Peas

  • Throw in any other veggies that need using up

Cupboard Ingredients

  • 1 Tablespoon Olive Oil

  • Soy Sauce to serve

Method

  1. Put the egg noodles in a large bowl, cover with boiling water and leave to soak for 8 mins, or until the noodles are tender.

  2. Do the same with the broccoli and peas and steam for 8 minutes.

  3. Meanwhile, heat the oil in a large, non-stick frying pan and fry the spring onions for 1 min.

  4. Add the bean sprouts and continue to fry, stirring, for 2 mins. Add in the steamed veg and stir for another 1 minute.

  5. Drain the noodles and add to the pan with a good splash of soy sauce.

  6. Stir-fry for 1 min more, then season and serve.
