Veggie Burger Pockets

10 Minute Veggie Burger Pockets. Amazing for lunch or dinner!

Serves: 2 Time: 10 minutes


 

Ingredients

  • 2 Linda McCartney Burgers

  • 1 Garlic Clove, minced

  • 1⁄4 Paprika

  • 100g Green Salad, of your choice

  • 45g Roasted Red Peppers, sliced

  • 1/2 Cucumber, sliced thinly

  • 1 Tablespoon Olive Oil

  • 75g Feta Cheese, crumbled

  • 2 x GF pitas, warmed

Method

  1. Cook the veggie burgers according to the package instructions.

  2. Meanwhile, in a large salad bowl, toss the salad, garlic, paprika, red peppers, cucumbers, feta, olive oil and season to taste.

  3. Warm the pitas up in the microwave and slice one end open, being careful not to burn your fingers.

  4. Begin to stuff the pitta with the yummy salad mixture, and add the burger. serve with extra salad if you like!
