Baked Salmon Parcel

Ready in 20 mins, serve with rice or sweet potato fries.

Serves: 2 Time: 20 minutes



  • 1 courgette, sliced

  • 1 red onion, sliced

  • 2 salmon fillets, 170g each

  • 30g dill

  • 1 lemon, sliced

  • 2 tbsp olive oil

  • 50g dry weight rice per person or sweet potato fries


  1. Heat the oven to 180°C. Prepare 2 pieces of baking paper large enough to create a parcel to fit the salmon and vegetables inside once folded up.

  2. Arrange a layer of courgette slices on each of the paper, then cover with sliced onion. Drizzle with 1 tbsp olive oil each and season well with salt and pepper.

  3. Next, add the salmon on top of the veggies and season again.

  4. Top with the dill and cover with a layer of sliced lemon.

  5. Seal the baking paper well by folding in the ends over each other to form a parcel.

  6. Bake for 18-20 mins, meanwhile cook your rice or sweet potato fries.

  7. Serve everything together and enjoy!
