Ready in 20 mins, serve with rice or sweet potato fries.

Ingredients
1 courgette, sliced
1 red onion, sliced
2 salmon fillets, 170g each
30g dill
1 lemon, sliced
2 tbsp olive oil
50g dry weight rice per person or sweet potato fries
Method
Heat the oven to 180°C. Prepare 2 pieces of baking paper large enough to create a parcel to fit the salmon and vegetables inside once folded up.
Arrange a layer of courgette slices on each of the paper, then cover with sliced onion. Drizzle with 1 tbsp olive oil each and season well with salt and pepper.
Next, add the salmon on top of the veggies and season again.
Top with the dill and cover with a layer of sliced lemon.
Seal the baking paper well by folding in the ends over each other to form a parcel.
Bake for 18-20 mins, meanwhile cook your rice or sweet potato fries.
Serve everything together and enjoy!
