10 Minute Beef Burgers & Coleslaw. Perfect for week night dinner on the table in 10 minutes.
Serves: 2 (easily doubled) Time: 10 minutes
Ingredients
25g Cooked Black Beans
1 Tablespoons Olive Oil
1⁄2 Teaspoon Garlic Powder
Salt and Pepper
115g Minced Beef
1⁄2 Tablespoon Dijon Mustard
2 Burger Buns
For The Coleslaw
150g Coleslaw Kit Veg Mix
Salt and Pepper
1⁄2 Teaspoon Orange Zest, grated
1/2 Tablespoon Orange, juiced
1⁄2 Teaspoon Dijon Mustard
30ml Olive Oil
1 Small Handful Fresh Parsley
1⁄2 Spring Onion, sliced
Method
Heat the grill. Then in a bowl, mash up the black beans with olive oil and garlic powder, until a creamy texture. Add the beef and season, then divide the mix into 2 patties. Brush the mustard and over the outside of the patties then pop under the grill. Cooking for around 2 mins per side.
Next, cut the burger buns in half and brush with any remaining oil and mustard. Then pop them under the grill to crisp up.
Meanwhile, in a bowl mix the orange zest, Dijon mustard, and orange juice with olive oil, season to taste then mix in your coleslaw veg, chopped spring onions, and parsley.
When the buns are ready, build them with the yummy burger patties and pile the coleslaw on top!!
