Cheese & Basil Omelette Wraps

Another great breakfast option, or serve with salad for lunch if you like.

Serves: 2 Time: 10 minutes



  • 6 large eggs

  • 4 tbsp water

  • 1 tbsp of olive oil

  • 1 bunch fresh basil

  • 200g cottage cheese

  • 12 cherry tomatoes


  1. Beat the eggs with the water and season well.

  2. Heat ¼ of the oil in a frying pan and fry 1 thin omelette, repeat until you have 4 omelettes. Once done, set aside and keep warm under some foil.

  3. Chop the basil finely and mix with the cottage cheese, season with fresh ground pepper.

  4. Cut the tomatoes into quarters, then divide between the omelettes along with the basil and cottage cheese. Roll them up and dig in. Yum!
