Cheesy Cod Open Pie

30 Minute Cheesy Cod Open Pie. Honestly, make this now. So so good! Cheesy loveliness!

Serves: 2 Time: 30 minutes


Fresh Ingredients

  • 2 x 110g Cod Fillets

  • 40g Cheddar Cheese, grated

  • 80g Spinach

  • 50g Soft Cheese

Other Ingredients

  • 1 Vegetable Stock Cube, dissolved in 100ml of boiling water

  • 300g Potatoes, sliced into discs

  • 30g Panko Breadcrumbs

  • 1 Teaspoon Veg Oil


  1. Heat the oven to 220°C. Then toss the potatoes in the veg oil and pop into the oven for 25-30 mins until nice and crispy.

  2. Layer the spinach into an oven-proof dish, then add the cream cheese to the stock and mix well. Pour the mix over the spinach and add the fillets on top. Season and sprinkle over the bread crumbs and cheese.

  3. Bake in the oven for 20 mins. When done, serve with the crispy potatoes and enjoy!
