Garden Veg Pie

40 Minute Garden Veg Pie. Cheesy, full of veggies and proper home comfort food.

Serves: 4 Time: 40 minutes


 

Ingredients

  • 40g butter

  • 2 teaspoon mustard powder

  • 600ml milk

  • 250g mature cheddar, grated

  • 2 large potatoes, sliced into discs

  • 1 head broccoli, cut into florets

  • 200g frozen peas

  • small bunch chives, snipped

  • 50g flour

  • 1 head cauliflower, cut into florets

Method

  1. Melt the butter in a saucepan, then stir in the flour and mustard powder and cook for 1 min. Gradually stir in the milk whisking until smooth with no lumps. Keep stirring until it starts to bubble and thickens. Remove from the heat, then stir in the cheese leaving a handful of cheese for later.

  2. Heat oven to 220°C and bring a large pan of water to the boil. Boil the potato discs for 5 mins, then throw in the broccoli and cauliflower for another 3 mins, then whack in the peas for 1 more min.

  3. Once done, drain the veg and pat dry. Save some of the potato discs for the topping, and stir the rest of the vegetables into the sauce with the chives.

  4. Throw everything into an oven-proof dish, and place the potato discs on top with the handful of grated cheddar.

  5. Bake in the oven for 20 mins until the topping is nice and crispy. Serve with extra steamed veg or salad if you like!
