30 Minute Gnocchi & Tomato Bake. Super easy and lovely and filling.
Serves: 4 Time: 30 minutes
Ingredients
1 tablespoon olive oil
1 onion, chopped
1 red pepper, deseeded and finely chopped
1 garlic clove, crushed
400g can chopped tomatoes
500g pack gnocchi
Handful basil leaves, torn
100g ball mozzarella, torn into chunks
Method
Turn the grill onto high, then heat the oil in a large frying pan, throw in the onions and peppers and saute for 5 mins until they begin to soften.
Throw in the garlic, fry for 1 min, then pour in the tomatoes, gnocchi, and bring to a simmer. Stir occasionally for 10-15 mins until the gnocchi is soft and the sauce is nice and thick.
Next, stir in the basil, and add everything to a large oven-proof dish.
Top with the torn mozzarella, and grill for 5-6 mins until the cheese is nice and golden. Serve with salad if you like!
