Pesto Pasta Salad

Super quick to make, perfect for lunch on the go.

Serves: 4 Time: 20 minutes
Ingredients
320g whole wheat pasta
360g roasted pepper, drained and sliced
6 tbsp basil pesto
125g mozzarella cheese ball, chopped
120g rocket
Method
Cook the pasta per package instructions, once cooked, drain and rinse under cold water until cooled.
In a large bowl toss together the pasta and remaining ingredients until combined well. Season well and serve.
This will keep for 3 days in the fridge, so perfect for meal-prepping lunch ahead.
