Pesto Pasta Salad

Super quick to make, perfect for lunch on the go.

Serves: 4 Time: 20 minutes



  • 320g whole wheat pasta

  • 360g roasted pepper, drained and sliced

  • 6 tbsp basil pesto

  • 125g mozzarella cheese ball, chopped

  • 120g rocket


  1. Cook the pasta per package instructions, once cooked, drain and rinse under cold water until cooled.

  2. In a large bowl toss together the pasta and remaining ingredients until combined well. Season well and serve.

  3. This will keep for 3 days in the fridge, so perfect for meal-prepping lunch ahead.
