15 Minute Pasta. So easy to make and super quick!
Serves: 4 Time: 15 minutes
Ingredients
300g tenderstem broccoli
300g pasta
1 tbsp pine nuts
1 large bunch of basil leaves
2 large garlic cloves
2 tbsp grated parmesan
1 tbsp olive oil
50g pancetta, diced
200g cherry tomatoes, halved
SAVER TIPS: If you prefer you can use pre-made pesto, if doing so boil the broccoli and add to the pasta whole instead of adding to the sauce.
Method
Boil a pan of water, throw in the broccoli and boil for 5 mins. Once done, remove and set aside.
Throw the pasta in the same pan and cook per package directions.
Meanwhile, whack the pine nuts, basil, garlic, parmesan, oil, and broccoli into a food processor and blitz until smooth.
Next, throw the pancetta into a frying pan and cook for 2 mins, then throw in the tomatoes and cook for a further 3 mins together until they soften.
Once the pasta is cooked, throw into the pancetta pan, add the pesto and mix well. Add a little of the pasta water if you think it needs it, and serve. Enjoy!
