Pesto Pasta with Crispy Pancetta

15 Minute Pasta. So easy to make and super quick!

Serves: 4 Time: 15 minutes

  • 300g tenderstem broccoli

  • 300g pasta

  • 1 tbsp pine nuts

  • 1 large bunch of basil leaves

  • 2 large garlic cloves

  • 2 tbsp grated parmesan

  • 1 tbsp olive oil

  • 50g pancetta, diced

  • 200g cherry tomatoes, halved

SAVER TIPS: If you prefer you can use pre-made pesto, if doing so boil the broccoli and add to the pasta whole instead of adding to the sauce.

  1. Boil a pan of water, throw in the broccoli and boil for 5 mins. Once done, remove and set aside.

  2. Throw the pasta in the same pan and cook per package directions.

  3. Meanwhile, whack the pine nuts, basil, garlic, parmesan, oil, and broccoli into a food processor and blitz until smooth.

  4. Next, throw the pancetta into a frying pan and cook for 2 mins, then throw in the tomatoes and cook for a further 3 mins together until they soften.

  5. Once the pasta is cooked, throw into the pancetta pan, add the pesto and mix well. Add a little of the pasta water if you think it needs it, and serve. Enjoy!
