Rosti Chicken Pie

45 Minute Rosti Chicken Pie. Oh just you wait to try this banger! British home comfort pie, on the table in 45 minutes.


Serves: 4 Time: 45 minutes

 

Ingredients

  • 60g Potatoes, grated and water squeezed out

  • 240g Shredded Kale or Spinach

  • 80g Cheddar Cheese, grated

  • 100g Cream Cheese

  • 500g Chicken Breast, cubed

  • 2 Chicken Stock Cubes, dissolved in 300ml boiling water

  • 2 Tablespoons Cornflour

  • 2 Tablespoons Dijon Mustard

  • 2 Tablespoons Veg Oil

Method

  1. Heat the oven to 200°C.

  2. Add the mustard, cream cheese and cornflour to the stock, whisk well until fully combined.

  3. Next add the kale, chicken and the stock mix to an ovenproof dish, season and mix well.

  4. Add the cheddar cheese, potatoes and seasoning to a bowl. Drizzle over the veg oil and mix well.

  5. Scatter the potato mix on top of the chicken, and bake in the oven for 45-50 mins.

  6. Once cooked through, serve and enjoy with steamed veggies of your choice.
