Thai Fish Curry

Ready in 20 mins, super easy to make and minimal ingredients.

Serves: 4 Time: 20 minutes



  • 1 onion, chopped

  • 3 tbsp green curry paste

  • 400ml canned coconut milk

  • 600g white fish fillets, coarsely chopped

  • 360g frozen vegetable mix of your choice

  • 1 tbsp olive oil

  • 50g dry weight rice per person


  1. Start cooking your rice per pack instructions. Heat the oil in a wok over high heat. Throw in the onion and cook for 3-4 mins, then add the curry paste and cook stirring for 1 more min.

  2. Whack in the coconut milk and bring to a boil, reduce the heat to medium-low and add the fish and frozen veg.

  3. Simmer for 15 mins, until the fish is cooked and veggies have warmed through.

  4. Serve with rice and enjoy!
